Update project for Fusion compatibility
Updated the Jaffle Shop project to work with dbt Fusion and dbt Core v1.12+, refactoring YAML syntax for semantic models, updating package versions, and removing legacy Semantic Layer metrics in favor of the new embedded format. The project now builds successfully without warnings or errors.
Upgrade dbt-date to version 0.19.0
Updated the dbt-date package dependency to version 0.19.0, which now supports ClickHouse. This change reduces the number of customizations needed in the ClickHouse fork of the project.

Upgraded dbt_utils to version 1.3.3 and dbt_date to version 0.17.1 to get the latest features and bug fixes from these packages.

Upgraded pre-commit hooks to newer versions, including standard pre-commit hooks from v4.5.0 to v6.0.0 and Ruff linting tool from v0.3.4 to v0.14.10, with the Ruff repository moving to a new maintainer.
